Chocolate Macadamia Nuts
Banana Cake Galore by Yin Chew
Even though I am a dental marketing consultant hired to help with dental advertising promoting healthy oral habits, I have a terrible secret.I am profoundly addicted to desserts like cakes, pies, ice cream towers, Chocolate fountains, you name it! So, who knew that I would be entranced by something as ordinary-sounding as banana cake? Seriously, banana cake? Let me tell you, not all banana cakes are created equal and this is certainly no exception. This particular recipe results in a moist texture with a down-home look, like something my grandmother used to make for me as a child. Ah, nostalgia! So, here are the ingredients you’ll need to have at room temperature to make a banana cake that will taste like you found it at one of those old-fashioned mom-and-pop bakeries.
I cup butter; or try the same amount using applesauce for as alternative
4 eggs
1 ½ cups sugar
1 cup sour cream
½ cup ripe, mashed bananas
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
3 cups flour; for a healthier version, use whole-wheat flour
Cream the butter and sugar together, and then add the bananas and mix until smooth.
Then, add the eggs one at a time.
Now add sour cream, baking soda, baking powder, vanilla and flour. Mix on low speed for 1 minute and then on 2nd speed for about 2 minutes or until smooth.
Place your cake mix in a well-greased and floured 10 inch x 3 inch tube pan and let bake in a preheated 350° oven for about 25 to 35 minutes, test cake by inserting a pick in the center and if it comes out clean then it is done.
Icing
4 tablespoons flour
1/2 cup butter
1/2 cup shortening
1 cup granulated sugar
1 teaspoon vanilla
1 cup milk; I used fat-free milk
Add the flour to the cold mik to a pan and stir. Cook the mixture on the stove until it is thick. Remove pan from stove and let mixture cool.
In a mixing bowl, add butter, shortening, sugar and vanilla. Mix all ingredients together for 1 minute. Add the cooked mild and flour mixture and whip for 2-3 minutes until desired fluffiness.
Now, unless you have a dental consulting appointment scheduled soon, here are some optional, sugar-inspired ingredients to think about adding to your banana cake. I added a cup of chocolate chips to the mix, because I really, really love chocolate. One of my friends who used this recipe added 1 ½ cups of marshmallows and macadamia nuts, so feel free to be creative with your own version of this classic banana cake.
